Bisilla (Vegetarian Pea and Carrot Stew)

Vegetarian!

Ingredients
1 tablespoon Butter
2 tablespoons Olive oil
2 small Onions (chopped)
2 cloves Garlic (minced)
1 1/2 teaspoons Salt (or to taste)
3/4 teaspoon Pepper
15 ounces Tomato sauce
2 tablespoons Tomato paste
3 1/2 cups Water or broth
6 cups Peas (original recipe uses frozen)
2 cups Carrots (peeled & chopped)
2 teaspoons Granulated sugar
SERVING SUGGESTIONS INCLUDE:
Rice
Hot sauce
Chili flakes
Sliced peppers
Bread

Step by Step Instructions
  1. Melt the butter and olive oil in a deep medium-sized pot. Add the onion, garlic, salt, and pepper and saute for 3 to 4 minutes. Add tomato sauce, tomato paste, and water/broth.
  2. Bring things to a boil, then reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
  3. Stir in the carrots, peas, and sugar, then cover and cook for 20 to 25 minutes.
